That is not to say that we don’t have a very definite purpose in life – we do, and that is to manufacture the best high quality meal accompaniments available to Caterers today. We have a range of products built up over the years which can be found in the ‘Products’ section of this site. This range can easily be added to with bespoke products. One of our major strong points is our ability to understand the caterer and their problems.
B&DFL was set up by hotelier John Davis and professional Hotel/Restaurant Head Chef Clive Barker. (We are now extremely well supplemented by a team of Chefs and Technical Managers). We have both had to learn manufacturing from scratch and have come to food manufacturing from a different perspective – coming from hotels it made good sense to set the manufacturing ’kitchen’ up with quality kit that we both knew well, and which we knew would provide the quality results required. In the main this involved Bratt pans.

Keeping it real.
To make a restaurant quality chutney or sauce, a Bratt Pan is essential. Chefs understand Bratt Pans, and thus it was, and still is, Chefs that we employ. It was only after a year or so that it became clear that Bratt Pans are not the norm in manufacturing companies… We were different! More normal manufacturers use closed cooking vessels of some 1 ton capacity, the largest true Bratts that we use are 250ltr.
We do not wish to labour the point……but if you want a true high quality meal accompaniment for your operation then it has to be made in the traditional restaurant way – we defy anyone not to be able to use our products ‘straight’ from the jar or container. Our products, as you will see from our current client list, are to be found in top hotels, national restaurant chains, national pub chains as well as ‘on the rails’ and we are proud to say that our products are in the ‘air’ 24 hours of every day in one form or another.
We have never worked with retailers, although we have the ‘credentials’ being BRC Higher Level rated.
Give it some ‘stick’
Nor do we believe that packaging should constrain a product – sachets (or sticks) have been always considered a ‘poor relation’, but not in our book. We put exactly the same dressings in bottles, buckets, pouches and sachets. Have a look at our stick pack sachet range of individual portions that enables, for example, an airline to offer quality at ‘the back of the plane’ as well as at the front. The only difference is the packaging.
To sum up, we are passionate about food and constantly monitor market trends and consequently spend hours and hours on NPD. Bring us a product or a menu that you would like an accompaniment for and we will give you a range of suggestions from existing lines.
Based in St Leonards on Sea, East Sussex B&DFL started off with one industrial Unit and has now expanded up to 5 ‘in a line’.
